Mini Sfera Basil

These sferas are made from a smooth crémeux based on eggs, butter and the juice of basil. Although basil is best known as a savoury herb often used in Italian dishes, it can also be an intense seasoning in desserts. Preparation advice

• Thawing time: 5 minutes at room temperature (if immediate use), 10 minutes in the refrigerator.

Storage advice

• Store at -18°C. After thawing, store for a maximum of 48 hours between 0 and 4°C. Do not refreeze a thawed product.
